Listen, if there’s one thing I don’t have in this life, it’s a natural talent for baking. But do I let that stop me? Absolutely not. Every week, I march into my kitchen like a contestant on The Great British Bake Off (minus the skill and the soft piano music) and try to whip up something new in my oven—which, by the way, is approximately 147 years old and has serious commitment issues when it comes to keeping a consistent temperature.

Anyway, right before I gave birth, I stumbled across a ridiculously easy recipe online for the ultimate crispy bread. Just three ingredients. No kneading. No starter. No fancy tools or baking gadgets needed. All you need is flour, dry yeast, salt, water, a baking tray, and something to cover the bread while it bakes. That’s it. The rest? Just a bit of patience while it rises, then 20 minutes of baking, and boom—you’re basically a wizard.

Long story short, the recipe is insanely simple, and the result is shockingly tasty, crunchy, and legit bakery-level good.


Here’s what you’ll need:

  • 1 1/4 cups lukewarm water
  • 2 teaspoons salt
  • 2 teaspoons dry yeast

Mix those three together first, then add:

  • 420g 00 flour (or all-purpose if you’re not picky)

The dough will be sticky—that’s totally fine. Wet your hands and try to shape it into a rough ball. Don’t stress, it’s not supposed to look pretty yet.

Cover the dough with a clean cloth and let it sit on your counter for about 30 minutes. After that, give it a bit of love: wet your hands again and use a simple folding technique (video linked below!) to shape the dough. You’ll be letting it rest a few times in between folding rounds—think of it as a little nap for your dough.

When you’re ready to bake:

  1. Grease your baking tray with a bit of olive oil and dust it with some flour.
  2. Gently place the dough on the tray.
  3. Cover it with a metal bowl or a cake tin (also greased and floured, to avoid stickiness drama).
  4. Pop it into a preheated oven at 260°C (500°F) for 20 minutes.
